Canon 5D Mark III, Canon 100mm f/2.8L IS Macro lens, 1/10 sec at f/8, ISO 100

I never knew how tasty beets were until I started roasting them. This is a very simple recipe, and the best part is you can eat it cold (which means a simple make-ahead dish!).


– Beets, washed (and peeled if you want, but I didn’t for these) and sliced.
– Balsamic vinegar (I used a fig-vanilla balsamic)
– Olive oil
– Crumbled Goat Cheese
– Fresh mint leaves

In a bowl, mixe together olive oil and balsamic (about 50/50, I don’t know how much exactly, just enough to coat the beets). Put them on a layer of tin-foil in a pan into a pre-heated oven (to 400 degrees Fahrenheit) and bake for 35-ish minutes. Remove them and let cool.

Then, put the beets on a plate and sprinkle goat cheese and mint over them, and also drizzle a little bit more balsamic on top. Then, eat and smile!
